Operational Consistency: Three ways to get there?

Nearly everyone in the restaurant business has heard a version of this inconsistency nightmare story. You discover a great new restaurant.  You boast to friends about how good the food and service is. Finally you return with friends and family, only to have a horribly disappointing experience. No the management didn’t change! This is simply a classic example of why guests place such a high value on consistency.

Industry luminaries like Joe Lee, former chairman of Darden Restaurants, and Norman Brinker, former chairman of Brinker International, made this a cornerstone of their restaurant empires. Without the ability to consistently deliver on a promised experience, I would even argue, you don’t have a brand. Your brand and your promised experience are one in the same in the minds of your guests. Repeatedly fail to deliver on the promise and your brand becomes worthless.

Now if improving operational consistency or maintaining it during growth are your goals, there are 3 interconnected roads that will lead you to these objectives. These drivers of operational consistency are (1)talent selections, (2)training, and (3)systematization. Depending on your operations you may benefit from one or some combination of each of these approaches.

Talent Driven Consistency

Over the years, as I pursued my passion and training in the culinary arts, I have had the opportunity to spend time behind the scenes of some legendary food operations, including the Waldorf Astoria in New York, Ritz Carlton in Laguna Nigel, and Hay-Adams in Washington D.C., where I completed an apprenticeship. Each of these operations are famous for exceptional quality and above all operational consistency.

Spend a little time in either of their kitchens or dining rooms and the main reason is immediately clear; they attract and hire only exceptional talent. If talent is defined as an existing set of skills and abilities, then such operations, by virtue of their reputation, have the luxury of choosing from the cream of the crop. For example, I cannot envision anyone of the above operation’s kitchen staff not being able to produce a perfect “Brunoise” upon request from the executive chef or anyone in the dining rooms not knowing how to properly control the pace of a meal.

Now, I realize that a small percentage of restaurants operate in market segments that attracts the most elite talent. My real point is this. Hiring the best talent that fits your operation and that you can afford is the first step to building operational consistency.

Training Driven Consistency

Likewise, training is a huge area of impact for restaurants, when it comes to creating consistency. I watched this critical area evolve over the years. When I first started in the industry the “Magic Apron Technique” was still very common. Managers would hand a new employee a kitchen or dining room apron and magically expect the employee to figure out what to do next.

Since those days, we have made great leaps to training checklists, training manuals, certified trainers, regional training managers, and dedicated training departments. While I firmly believe that all of these weapons in our training arsenals are great, I find that the most successful operators create a “Training Cultures”.

These restaurant leaders have developed a unique commitment to ongoing training. Their employees see training not as a weekly or monthly event, but, as a part of everyday business. I recently experienced such a culture during a visit to Ann Arbor Michigan. I had heard of the remarkable service and food quality of a local deli called Zingerman’s, so I decide to see for myself.

The operation, which is best known for it’s focus on employee training was everything that I had heard. The place operated like a well oiled machine, in spite of a line extending outside the front door. More importantly, each hourly employee that I spoke with was so well versed on the food and operation, I could have easily mistaken them as an owner or manager of the business. It is this type of training culture that results in consistency and a competitive advantage.

Systems Driven Consistency

Once you have selected the best employees available and achieved training nirvana, you may still want added insurance. One way to do this is to bake consistency right in to your operation. Your menu, product specifications, and equipment selections are three important areas that can help build systemic consistency.

Ray Kroc the legendary leader responsible for developing the McDonald’s Franchise, leveraged all three of these areas, to create one of the most consistent food operations the world has ever seen. Beyond fast food there are other examples. In the area of menu development the upscale dinner house, Houston’s, comes to mind. Over the past 15 years, I have dined in there restaurants all over the country from Chicago to Orlando, and Los Angeles. I cannot recall a disappointing experience, which is saying a lot for such a large operation. I am certain that their highly focused menu is a major contributor to their success.

Similarly, a sensible approach to product sourcing can relieve pressure on your operations and reduce labor costs. Consider this example. In the 90’s, when infused oils and flavored vinegars first gained popularity, chefs all over the country were producing, storing, and labeling many versions of these products right in their kitchens. Today top quality commercial versions are available everywhere. Larger operations even go as far as have proprietary versions of their best spice blends, sauces, and other key ingredients produced for them.

When it comes to equipment, having the right tools makes a world of difference with operational consistency. I am always shocked when I visit a kitchen and find the only operating portion scale hidden deep in a storage area. Proper tools and equipment for measuring, weighing, producing, and serving your recipes lay at the heart of consistency. Starbucks realized this fact, when it chose to install high quality, automated espresso machines in their operations.

Although there may be varied roads to operational consistency for different types of operators, the big 3 categories of talent selection, ongoing training, and systems implementation stand as proven paths.

You want to be out in a vacation with your family and what you have decided is to have it in a fine resort with beautiful sceneries and serene surroundings. You browsed the yellow pages. Alas! There are numerous vacation resort spots you can choose from.

From around the world there are countless resorts abounding every continents and countries. You can research from A-Z and you will have a list of destinations. You can choose resorts depending on the weather when you apt to stay on the area. It can be a winter resort with snow skiing activities; it can also be on beaches during summers or those places with all year round resorts.

There are numerous packages to choose from. To start with your line up, here are some of the popular destinations you and your family can consider:

1.Orlando,Florida. The number one destination for family fun and sun. One week is not enough to see all the theme parks, restaurants, water parks and dinner shows. It is also a paradise for shopping.

2.Islands of Bahamas. Bahamas consists of around 700 islands with a perfect climate all year round. Two famous islands are Nassau and Grand Bahama. Bahamas is known for mangroves, lagoons, pine woods and white sand beaches. Some places are populated while some are private.

3.Charleston South Carolina. Carolina is packed with many mountains, lakes, beaches and recreational places like amusement parks and entertainment venues. With popular architectures and fanciful gardens, this refined placed have 2,000 buildings that has been restored for 300 years.

4.Honolulu Hawaii. Hawaii has not been famous before. It was the arrival of Europeans which marked the start of popularity of the place. Hawaii is famous for popular and beautiful beaches; one example is the Waikiki Beach, the biggest resort in the place. Other places to look forward is the Honolulu which is the capital of Hawaii and the scenic Kewalo Basin where you can do boat cruising and fishing.

5.Key West Florida. Florida is much closer to Cuba than its mainland. Resorts, hotels and gardens abound the locale. There are festive ambience on different resorts and places with acrobats and fire eaters performing during sun sets. You can also enjoy shopping and sightseeing in Florida.

6.Lake Havasu. This lake is close to Arizona and South California. The famous London Bridge is built here. There are lakeshores, about 400 miles where different water sports such as parasailing, jet skis, and races can be done simultaneously. There are also numerous campgrounds, parks and restaurants in the place.

7.Sacremento California. If you want a place with a touch of old times, your family can go to Sacramento. Sacramento’s museums, parks and library where records of the Old Sacramento like early families, places and landmarks of the place are house. You can also go to their modern places like Waterworld USA where children can go swimming. There are also picnic areas and zoo where children can enjoy playing and strolling around.

8.Salt Lake City Utah. If your family seeks adventure, Utah can be a perfect place for you. You can dwell on the different kinds of adventure like water adventure where you can do rafting on the canyons. You can also engage in mountain adventure and do hiking and biking on the highlands. You can also choose the wilderness adventure and do deer, lion or elk hunting where you can earn extra income while having fun.

9.Sedona Arizona. This place is popular for the majestic landscape formations Red Rocks. The rocks surround the Coconino National Forest and the Oak Creek. Sedona is usually visited by Hollywood producers and favors it as venue for their movie making.

10.Zion National Park. Is also called “Land of the Rainbow Canyons” Canyons here are comprised with beautifully colored red orange sandstones. Zion is also popular for its hanging gardens with flowers abundant during spring or summer.

Visiting Popular Summer Vacation Destinations While on a Budget

When selecting a summer vacation destination on a budget, it is important that you do not limit yourself. There are too many individuals who search for a vacation destination solely based on price. Instead of first searching for low-cost vacations, you are encouraged to find the vacation destination of your dreams. Once you closely examine the hotels, restaurants, amusement parks, or beaches that your selected destination has to offer, you can easily learn how and where to save money.

If the beach sounds like the perfect summer vacation destination, you have a number of options. Popular beaches, that are designed for those on a budget in the United States may include, but are not limited to, Virginia Beach, Pensacola Beach, and Long Beach. You can plan a beach vacation in the Caribbean or overseas; however, the cost of air travel will likely increase the cost of your vacation.

Virginia Beach, Long Beach, Daytona Beach, Myrtle Beach, and Long Beach are all known as vacation “hotspots.” Many individuals automatically assume that the most popular beach destinations are too expensive. While some facilities and activities may be high priced, there are ways for you to vacation there on a budget. Instead of staying at an ocean-side resort, you could save a large amount of money by booking an inland hotel. The same can be said for restaurants, bars, and event centers. Almost everything is more expensive on the shoreline.

If you are more interested in spending your vacation golfing, you may want to examine the golf resorts in and around the Untied States. Many popular golf courses are located in Myrtle Beach, Newport Beach, and Scottsdale. If you are on a budget, you can easily benefit from purchasing a resort package. Many popular golf resorts, in the United States, Europe, and the Caribbean offer packages that offer accommodations that may include travel, hotel stays, golf course visits, and dining.

Golf resorts are popular vacation destinations for many individuals, but many can be expensive. If you are unable to obtain a discount vacation package, but you still want to your vacation to have a focus on golf, you have a number of options. Many golf resorts allow vacationers to play on their courses, even if they are not staying at the resort. It is also possible to golf at well-known golf courses that are not considered resorts. As with a beach vacation, you may be able to save a large amount of money by staying at a hotel or dinning away from a golf resort.

Theme parks and amusement parks are popular vacation destinations, especially for those with children. If you and your family are interested in vacationing at a United States theme park, you have a number of options. Theme park resorts are similar to, the above mentioned, golf resorts. A large number of well-known theme park resorts, including Orlando Studios, Disneyland, and Disney World can be selected, even if you are on a budget. Many of these resorts offer vacation packages that include hotel stays, theme park use, onsite dinning, and much more.

Theme park resort packages are a great way to save money, but you could save even more by not paying for services that you will not use. If you do not have to fly to reach your destination you should not have to have travel accommodations included in your package. You may also be able to find cheaper hotel accommodations that are located a short distance away from the theme park of your choice. In addition to theme park resorts, you can find days of fun at smaller parks, such as Six Flags, Sea World, and Bush Gardens.

You may recognize many of the above mentioned summer vacation destinations. Popular vacation destinations do not have to be financially out of your reach. Simply by cutting a few corners, you could be vacationing along side the rest of America, even while on a budget.

My favorite Walt-Disney-World-Resort

Disney World resorts in Orlando Florida are categorized into three distinct price levels. The value resorts consist of Disney’s All Star Movie, All Star sports, All Star Music and the Pop century resort. All are decorated with large Disney icons featuring cartoon characters from their movies, there is even a large beetle car embedded in the wall of the All Star movie resort to remind you of the love bug Disney film. The music resort, as you expect has musical instruments as icons, a large drum and a violin help to fix the Disney ingenious theme in your mind, this is my favorite value hotel.

Disney Moderate priced resorts.

The moderate resorts are made up from three of the worlds most popular area’s namely the Port Orleans resort which is divided into two distinct halves, the riverside and the French quarter, the riverside is my favorite, one of the advantages of staying at Port Orleans is the free use of a water taxi which transports you down to the Disney Down town area. Lynn and I love the riverside area, it is our favorite.

The Caribbean-Beach-Resort has 2,112 bedrooms in 33 colorful 2-story buildings on the shores of a 42 acre lake, it has a lovely relaxing carefree atmosphere to it, and if you close your eyes you really would think you are on a wind swept Caribbean Island.

All Disney resorts have a very convenient benefit to all those staying in Disney Hotels. Free transport is provided from your resort to all Disney theme parks and back to your hotel. When you are in Epcot, you can jump on the monorail, or when you visit Magic Kingdom you have full use of the train, you board it just above the entrance to the  Magic Kingdom, it transports you around this wonderful entertaining park,  you can get off and on at the different area’s, it helps with those aching feet.

Disney’s Coronado-Springs-Resort is a Southwest-themed  resort hotel encircling Lago Dorado—a glimmering 22-acre lake—that evokes the spirit and romance of Spanish-colonial Mexico. The brightly colored Spanish-style Guest rooms are separated into 3 distinctly themed areas. The Casitas offer an urban terra-cotta paradise.

The rustic Ranchos resemble charming Southwestern pueblos. Cabanas provide a quaint beachfront retreat complete with cozy hammocks. Want to unwind after a busy day of theme park amusement and excitement?  The 22-person hot tub is one of the largest at any Walt Disney World Resort hotel, an ideal relaxation benefit provided by Disney.

Disney Deluxe resorts

Disney Polynesian resort is my favorite deluxe hotel on the Disney World Orlando campus, the beautiful white sandy beaches and excellent swimming pools make it one of the most relaxing hotels. Large clean, well decorated themed rooms, with Magic Kingdom views make this resort really special, there are rooms which give you views of the splendid Cinderella castle in Magic Kingdom. The resort has superb award winning restaurants on site, it truly is exotic, a Caribbean style resort recreated for your pleasure in the middle of the sunshine state of Orlando, Florida.
